Fredy Esquivel is the bilingual Food and Guest Services Manager for SVDP’s Free Dining Room. He supervises our kitchen and guest services staff. Fredy has worked at SVDP for twelve years and has a background in the restaurant business for more than 20 years. He received his training from the chef of a corporate cafeteria who later served as his mentor. He is a Certified Food Safety Manager. He has learned to provide delicious, nutritious food from a mix of donated and purchased food that changes daily. He is committed to cooking low-salt menus and providing healthy, balanced meals with lots of fruits, vegetables, and protein for our at-risk populations. Under Fredy’s supervision, the kitchen has remained open single every day during his tenure, as it has since it opened in 1981.
